Southern Rock Lobster is the world’s most valuable lobster. Cold-water grown, slow to mature, with sashimi-grade flesh and an unrivalled taste.
Unlike its American cousin, it does not have large claws. Instead, its rugged body is covered with protective spines and its long antennae are used for navigation, defence, and communication. Growing slowly in cold waters gives Southern Rock Lobster its sashimi-grade flesh, firm texture, and extraordinary flavour.
Sustainably Wild-Caught
All commercial supply is sustainably harvested under the quota management systems of New Zealand and Australia. The species cannot be farmed due to its complex life cycle, making every lobster a rare and valuable gift from the ocean.

Natural Habitat
Southern Rock Lobsters are wild caught in the cool coastal waters of New Zealand and southern Australia, at depths ranging from 1 to 200 metres.
These pristine environments — Fiordland’s dramatic fiords, South Australia’s rugged coastlines — are not only world-renowned travel destinations but also vital ecosystems. Protecting them is central to the company’s ethos.
Fiordland Southern Rock Lobster has long been involved with the Fiordland Marine Guardians, working to preserve the natural environment and ensure the long-term sustainability of the fishery.
